Chocolate Chip Banana Muffins

I took that banana bread recipe, and modified it for muffins with some small changes.  I added an extra banana to replace the egg in the recipe.  Eggs act as a binder, and bananas are a common substitute.  For the extra banana taste, and to cut fat it was a great substitute.

I doubled the baking soda in the recipe, which helps create extra lift for the muffins, which isn’t needed so much in a bread.  It helps prevent the muffins from being so dense.

Banana bread recipe modified for muffins with chocolate chips.

  • 4 whole Ripened Bananas
  • 1/3 cup Unsalted Butter melted
  • 3/4 cup Brown Sugar
  • 1 tspn Vanilla Extract
  • 2 tspns Baking Soda
  • pinch Salt
  • 1 1/2 cups All Purpose Flour
  • 1 cup Chocolate Chips
Instructions
  1. Preheat oven to 350 degrees Fahrenheit.  If you're not using a silicone muffin pan, then grease the pan with a cooking spray or butter.

  2. Microwave butter to get it melting.  While that melts, mash the bananas by hand to get them ready for mixing, and then add in the melted butter and blend.

  3. Add in the brown sugar, and vanilla then blend.

  4. Add in the salt and baking soda and blend.

  5. With a spatula to prevent overmixing, add in the flour to the recipe.  Halfway through mixing in the flour, add in your chocolate chips.

  6. Evenly fill the muffin pan and bake for 20-22 mins.  Check with a toothpick for doneness, if you don't pull any unbaked muffin dough then it's ready to pull.  Otherwise let bake for a little more time.

Recipe Notes
  • To make Chocolate Banana Muffins - add 3 tblspns cocoa powder when mixing the butter and bananas
  • You can replace the 1 cup chocolate chips with walnuts, raisins, fruit, etc.
  • This recipe works well for a banana bread as well.

    Excellent! Looking for a recipe that my family loves! I baked another 4 min and used half a cup instead of a cup of chocolate chips. I also used white choclate chips. Eager to remake and also to try the variations! I’m writing this and saving the recipe! It was that good!

    What I started doing was, using 1/2 cup chocolate chips or omitting them entirely, and adding in 2Tbls of cocoa powder to the butter/banana mixture. It will make Chocolate Banana Muffins, and cut out a lot of extra sugar. There’ s enough sugar in the base muffin recipe where the chocolate won’t taste so dark.
